Cranberry Waldorf Salad

Try this great fruit salad recipe...the Cranberry Waldorf Salad !

INGREDIENTS
  • 1 (12-ounce) package fresh cranberries
  • 2 cups granulated sugar
  • 4 medium apples, unpeeled, cored and diced
  • 1/2 cup chopped celery
  • 1/2 cup seedless red grapes, halved
  • 1/2 cup chopped walnut pieces
  • 1/4 cup mayonnaise
INSTRUCTIONS
1. In food processor, coarsely chop cranberries, stir in sugar. Cover and chill 4 hours.
2. Drain cranberries for about 2 hours, reserving liquid for another use.
3. In large bowl, stir together remaining ingredients and gently stir in drained cranberries.
The fruit salad recipe is ready...nice one !

Cranberry Fluff Salad

Cranberry Fluff Salad..another nice fruit salad recipe....

INGREDIENTS
  • 1 (16-ounce) package fresh cranberries
  • 1 1/2 cups sugar
  • 2 pounds Red Flame grapes, quartered
  • 1 (16-ounce) package miniature marshmallows
  • 2 cups pecans, chopped
  • 1 (12-ounce) container nondairy whipped topping
INSTRUCTIONS
1. In a food processor, grind cranberries. Transfer to a medium bowl and mix with sugar. Chill overnight in the refrigerator.
2. In a large bowl, mix together cranberry mixture, marshmallows, pecans, and grapes. Fold in nondairy whipped topping.
3. Refrigerate for 1 hour before serving.
The fruit salad recipe is ready for starters....enjoy it !

Cool Sunshine Salad

Cool Sunshine Salad...a nice fruit salad recipe to try...great one !

INGREDIENTS
Dressing:
  • 1/2 cup light French salad dressing
  • 1/4 cup creamy Italian salad dressing
Salad:
  • 1 head romaine lettuce, washed and thinly shredded
  • 6 slices cantaloupe
  • 6 strawberries, stems and caps removed
  • 1 cup blueberries, rinsed and stemmed
  • 6 ounces sharp cheddar cheese, shredded
INSTRUCTIONS
1. For Dressing: In a small bowl, whisk dressings together until smooth. Cover and refrigerate for at least 1 hour before using.
2. For Salad: Divide shredded lettuce equally among 6 plates, mounding lettuce in the center of the plate.
3. Arrange cantaloupe slices along edges of plates.
4. Halve strawberries and place a half at each end of cantaloupes.
5. Arrange a cluster of blueberries and a small mound of shredded cheddar cheese on edge of plate opposite of cantaloupe.
6. Drizzle dressing lightly over all.
